On the products table, there is a column called STATUS, which seems to either store “Available” or “Discontinued”. When I change a product’s status to “discontinued”, the product still shows up as a choice in the product tree (when adding a product to an opportunity). What’s the best practice on getting rid of (discontinuing) a product?

The filters on the add product screen are all empty by default (quite poor in my opinion). So it doesnt matter what you set the product too it will still show up in the view. You would have to customisae the add product screen to ensure the filter for status is always set to "Available" or whatever you need it to be set to. That way your customisation will be hiding the products.

Dont delete the products as they are no doubt being referenced by opportunities.

But you look like an intelligent chap so I guess you knew that already
